Lovely and moist, great for the christmas season Ingredients:
125g unsalted butter |
1 cup castor sugar |
1 tablespoon lemon rind |
1 tablespoon lime rind |
2 lightly beaten eggs |
1 cup self raising flour |
3/4 desiccated coconut |
1 cup milk |
Directions:
1. In a bowl beat butter and sugar until light and creamy 2. Add rinds and eggs, mix well 3. Fold in flour and coconut, alternating with the milk until just combined 4. Pour into cake tray and cook for 45-50min at 180C |
