Citrus Chicken Cashew Salad |

The list of ingredients is long but the salad couldn't be any easier, especially if the dressing is prepped ahead. Ingredients:
1/2 cup fresh cilantro |
1/4 cup fresh parsley |
1/4 cup olive oil |
1/4 cup orange juice |
1 1/2 teaspoons red wine vinegar |
1 1/2 tablespoons dijon mustard |
1 teaspoon salt |
2 teaspoons sugar |
1/8 teaspoon pepper |
1 1/2 cups cooked shredded chicken |
3 stalks celery, sliced |
1/2 head romaine lettuce, torn into bite sized pieces |
4 scallions, sliced |
1 large red bell pepper, seeded and cut into thin strips |
1/4 cup roasted cashews |
Directions:
1. Make dressing by combining all ingredients in a blender and puree until smooth. refrigerate until ready to use. 2. In a large bowl combine the chicken, celery, lettuce, scallions and bell pepper. 3. When ready to serve toss with dressing and sprinkle top with cashews. |
