Citrus Chicken Cashew Salad

The list of ingredients is long but the salad couldn't be any easier, especially if the dressing is prepped ahead.
Ingredients:
1/2 cup fresh cilantro
1/4 cup fresh parsley
1/4 cup olive oil
1/4 cup orange juice
1 1/2 teaspoons red wine vinegar
1 1/2 tablespoons dijon mustard
1 teaspoon salt
2 teaspoons sugar
1/8 teaspoon pepper
1 1/2 cups cooked shredded chicken
3 stalks celery, sliced
1/2 head romaine lettuce, torn into bite sized pieces
4 scallions, sliced
1 large red bell pepper, seeded and cut into thin strips
1/4 cup roasted cashews
Directions:
1. Make dressing by combining all ingredients in a blender and puree until smooth. refrigerate until ready to use.
2. In a large bowl combine the chicken, celery, lettuce, scallions and bell pepper.
3. When ready to serve toss with dressing and sprinkle top with cashews.
