This recipe came from a little card in my local grocery store. I just made it and thought it would be nice to share. Great summer flavors! It is flavorful and would grill very well for a lighter alternative to BBQ during a cook out. Ingredients:
1 cup orange juice |
1/4 cup lemon juice |
1/4 cup olive oil |
1 (4 ounce) can chopped green chilies |
1 tablespoon minced garlic |
1 tablespoon oregano |
1 tablespoon ground cumin |
1/4 teaspoon ground red pepper |
4 (10 ounce) chicken breasts |
Directions:
1. Create the marinade for your chicken by mixing your orange juice, lemon juice, salt to taste, cumin, red pepper, garlic and oregano. 2. Marinate chicken for up to 6 hours. 3. Preheat your grill to 300-350 degrees f. You'll want to use medium direct heat for you grill pros out there! 4. Remove chicken from marinade, discard left over juices. 5. Grill chicken bone side up for 25-35 minutes. Turn once. Internal temperature should reach 180 degrees F. 6. Let chicken rest on a platter for about 5 minutes. 7. I recommend serving this with a side of white rice and black beans with just a hint of lime juice. |
