this is using whole fish that have been skinned. You could use fillets but i like the presentation of whole catfish. i serve this on a bed of long grain and wild rice with mushrooms. simple, clean with no leftovers. Ingredients:
4 lbs catfish, whole, skinned |
1 orange |
1 lime |
1 tablespoon basil, fresh, chopped |
1 teaspoon mint leaf, fresh, chopped |
1/2 tablespoon extra virgin olive oil |
Directions:
1. Slice orange and lime thin. 2. In belly cavity overlap and alternate orange and lime slices. 3. Rub fish lightly with olive oil. 4. Sprinkle basil and mint over both sides of catfish. 5. Overlap and alternate orange and lime slices on top of catfish. 6. Bake at 325 degrees F until meat flakes with fork. About 20 minutes. |
