I got this recipe from my sister-in-law who is a fabulous cook. She serves this often with grilled chicken and strawberry shortcake. Yummy Ingredients:
for dressing |
1/2 cup grapefruit juice |
2 tablespoons prepared mustard |
1/4 cup olive oil |
1/4 cup honey |
2 tablespoons poppy seeds |
2 tablespoons onion grated |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
for salad |
4 cups packed spinach leaves stemmed and washed |
2 cups canned mandarin oranges drained |
1/2 cup red onion rings |
avocado slices |
Directions:
1. In small bowl combine juice, mustard, oil, honey, poppy seeds, onion, salt and pepper. 2. Chill until serving time. 3. Place spinach, orange sections and onion in a bowl then toss with 1/4 cup dressing. 4. Refrigerate extra dressing. 5. Add avocado slices. |
