Citrus and Cinnamon Couscous |

I got this recipe from My Yahoo, if you can believe that! It sounds delicious! Use the leftover salad in a pita bread as a sandwich! MMMMM! Ingredients:
1 3/4 cups couscous |
1/4 cup orange juice concentrate |
2 tablespoons lemon juice |
2 tablespoons olive oil |
1/2 teaspoon cinnamon |
salt |
2 1/2 cups boiling water |
1/2 cup chopped parsley |
1/2 cup chopped green onion |
1/2 cup chopped mint |
pepper |
2 large navel oranges, diced |
Directions:
1. Put couscous, juice concentrate, lemon juice, olive oil, cinnamon and salt to taste in a large mixing bowl and stir. 2. Add boiling water, stir to mix and cover. 3. Allow to rest about 10 minutes, or until all water is absorbed. 4. Fluff with a fork. 5. Stir in greens and pepper to taste. 6. Add oranges and toss to mix. 7. Serve at room temperature. |
