I like these because there is no rolling and cutting with cookie cutters and they are a bit fancier than a dropped cookie...oh yea they taste pretty good too. Ingredients:
1/2c butter or margarine |
1c granulated sugar |
1 egg |
grated rind (or more) of 1 lemon, lime or orange |
13/4c all purpose flour |
2tsp baking powder |
1/4tsp salt |
milk |
3/4c sliced almonds |
icing |
1c icing sugar, sifted |
4-5tsp orange, lime or lemon juice |
Directions:
1. Cream butter and sugar, add egg and citrus rind. Beat until light and creamy. 2. Combine flour baking powder and salt. Add to creamed mixture, mixing just until smooth. 3. Divide dough into 4. Shape each into a roll 12'' long. Place 2 rolls on a greased or lined baking tray about 4'' apart. Flatten to 21/2'' width. Repeat with remaining rolls. Brush with milk and sprinkle almonds overtop, pressing in lightly. 4. Bake at 325F for 12 to 15 mins. or until edges are lightly browned. Cool. 5. ICING 6. Mix icing sugar with enough juice to make a smooth drizzling consistency. Drizzle over fingers. Let icing set then cut on diagonal into 1/2'' strips |
