...for using up leftover cooked yams from Thanksgiving. For a savory biscuit, omit the sugar. Ingredients:
2 cups unbleached flour |
2 tablespoons sugar (optional) |
4 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1/4 teaspoon cinnamon |
1/8 teaspoon allspice |
1/2 cup butter, cut up into small pieces (1 stick) |
1 cup mashed yam, cooked |
6 -7 tablespoons milk (or more) |
Directions:
1. Preheat oven to 425 degrees. 2. In a large bowl, combine the flour, (sugar,) baking powder, salt, cinnamon, and allspice. Stir well. Cut in butter using a pastry blender until the dough is crumbly. 3. In another bowl, beat the yams and milk together until smooth. Stir in the flour mixture. Add more milk if necessary to form a soft dough. 4. Turn the dough out on a floured surface and pat to 3/4 inch thickness. 5. Cut into 3 inch circles. Place on a parchment lined baking sheet. 6. Bake 18-21 minutes or until golden brown. |
