So easy and good!. From Penzey's Can also be made in 8x8 pan or doubled for 9x13 pan. Ingredients:
1/2c sugar |
3tbs shortening |
2 egg whites |
1tsp vanilla |
1/2c milk |
1c sifted flour |
1 -1/2tsp baking powder1/8 tps salt |
topping |
1tbs soft butter |
3tbs powdered sugar |
1tsp. cinnamon |
Directions:
1. Preheat oven to 375.Line cupcake pan with 10 liners. Set aside. Cream together sugar and shortening till fluffy.. Add egg whites,beat well. Add vanilla and milk. In seperate bowl,sift together the flour,baking powder and salt; gradually add to creamed mixture and beat till smooth. 2. Pour into cupcake cups and bake at 375 for 20-22 mins.. Remove from oven and spread tops with butter while hot. Then sift powdered sugar mixed with cinnamon over cupcakes. Serve warm. |
