These old-fashioned cinnamon-sugar cookies have only 60 calories and 1.1 gram of fat per cookie and are a great recipe for your holiday baking. Ingredients:
3 tablespoons reduced-calorie stick margarine, softened |
2/3 cup plus 1 1/2 tablespoons sugar, divided |
1 egg |
1 1/2 teaspoons vanilla extract |
1 1/2 cups plus 1 1/2 teaspoons all-purpose flour, divided |
1/2 teaspoon baking soda |
1/2 teaspoon plus 1/8 teaspoon ground cinnamon, divided |
Directions:
1. Beat margarine at medium speed of an electric mixer until creamy; gradually add 2/3 cup sugar, beating well. Add egg and vanilla; beat well. Combine 1 1/2 cups flour, baking soda, and 1/2 teaspoon cinnamon; gradually add to margarine mixture, beating well. 2. Sprinkle remaining 1 1/2 teaspoons flour evenly over work surface. Turn dough out onto floured surface. Lightly flour hands, and shape dough into 26 balls. Combine remaining 1 1/2 tablespoons sugar and remaining 1/8 teaspoon ground cinnamon. Roll balls in sugar mixture. Place balls, 3 inches apart, on ungreased cookie sheets. Pat each into a 2-inch circle. Bake at 375° for 6 to 8 minutes or until golden. Remove from cookie sheets; let cool completely on wire racks. |
