This old-time yeast coffee cake recipe is out of this world good! I use the same dough recipe to make Cinnamon Rolls. It makes 3 small coffee cakes that will be gobbled up as soon as they come hot out of the oven!
Ingredients:
2 (1/4 ounce) packages yeast
1 cup warm water
1/4 cup shortening
1/4 cup butter
1 1/2 teaspoons salt
1/2 cup sugar
1 cup whole milk, scalded
2 whole eggs, slightly beaten
6 -7 cups all-purpose flour
1 cup all-purpose flour
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon cinnamon
1/2 cup butter
1/4 cup chopped nuts
1/2 teaspoon vanilla
Directions:
1. Preheat oven to 200 degrees and turn off.
2. To make dough, melt yeast in warm water.
3. Mix butter, shortening, salt, sugar, hot milk. Add 2 slightly beaten eggs and the proofed yeast. Gradually add 6-7 cups flour, just until soft, semi-sticky dough.
4. Knead 10 minute on floured board.
5. Turn in greased bowl. Cover and let rise in warm oven 1 1/2 hours.
6. Punch dough and divide 3 equal portions into 3 greased 9 cake pans.
7. To make topping, mix 1 cup flour, 1/2 cup each sugar, brown sugar, cinnamon, butter, and nuts. Sprinkle over the dough.
8. Cover the pans and let rise in warm oven 45 minute.
9. Uncover, and bake 375 degrees 20 minute.
10. Drizzle 1/2 t. vanilla over each cake.
