Another recipe from the 90th celebration - this is one of my favorite coffeecakes...light and moist, full of blueberries and cinnamon. I've had it for so many years, I have no idea where/who this one came from, but I'm glad I've held on to it! Read more ! Ingredients:
3/4 cup sugar |
4 tablespoons butter |
1 egg |
1/2 teaspoon salt |
1/2 cup milk |
2 cups flour |
2 teaspoons baking powder |
2 cups fresh blueberries (use frozen as a last resort), washed, drained, patted dry, then dusted with a little flour to help keep them from sinking during baking) |
topping |
1/2 cup sugar |
1/3 cup flour |
1/2 teaspoon cinnamon |
1/4 cup softened butter |
Directions:
1. Mix sugar, butter and egg together. 2. Stir in milk; then add dry ingredients. 3. Gently fold in fresh blueberries. 4. Pour into a greased 9x9 or 7x11 baking dish. 5. Combine topping ingredients until crumbly; sprinkle over batter. Bake at 375 degrees for 30 to 45 minutes. |
