Scones are just lovely. Finding a recipe that works but easy is tough. This one is easy and works. The scones are delicious. But be careful not to over mix or over handle the dough. these are great with coffee and can be made quickly enough when you have unexpected guests. Ingredients:
2 cups sifted flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
3 tablespoons granulated sugar |
1/4 teaspoon salt |
1/2 cup cold butter |
1 egg |
1/2 cup buttermilk |
3 tablespoons softened butter |
1/2 cup brown sugar |
1 teaspoon cinnamon |

Directions:
1. Preheat oven to 400 degrees. 2. In a large bowl, stir together flour, baking powder, baking soda, sugar and salt. 3. Cut in cold butter until the mixture resembles coarse crumbs. 4. In a small bowl, beat egg with buttermilk; add to flour mixture folding just until mixture clings together (the key to a tender scone is to avoid over mixing the dough). 5. Turn dough out onto a floured board and with floured hands pat into a 12-inch circle. 6. Spread with the 3 tablespoons of softened butter. 7. Mix brown sugar with cinnamon and sprinkle all over the butter. 8. Roll dough from the outer edge (all the way around) towards the middle (you will end up with a ball of dough). 9. Turn dough over on the floured board and pat into an approx 8-inch circle that is about an inch thick. 10. With a large sharp knife, cut into 6 – 8 wedges. 11. Place in a square baking pan or cookie sheet 12. Brush with milk and sprinkle with lots of cinnamon sugar. 13. Bake for 10-12 minutes. Serve warm. |
