Cinnamon Scented Couscous |

A slightly sweet side dish. Ingredients:
1/3 cup slivered almonds |
2 cups water |
1 cup diced dates |
1 teaspoon ground cardamom |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground ginger |
1 tablespoon olive oil |
1 (10 ounce) package couscous |
Directions:
1. Preheat oven to 350. 2. Toast almonds until golden, stirring once (about 10 minutes). 3. Meanwhile, combine water, dates, cardamom, cinnamon, ginger and oil in a medium saucepan. 4. Cover and bring to a boil. Add the couscous, stir and cover before removing from heat. 5. Let it sit for 5 minutes and stir in the almonds. |
