I had to share this one! The dough needs to chill for 4 hours or overnight. These cookies are wonderful. Ingredients:
cinnamon mixture |
4 tbsp granulated sugar |
1 tbsp ground cinnamon |
cookie dough |
1 cup butter of butter flavored crisco |
1 cup light brown sugar |
2 large eggs |
1 tsp vanilla |
3 cups flour |
2 tsp baking powder |
1/2 tsp salt |
1 tsp ground cinnamon |
Directions:
1. For cinnamon mixture, combine granulated sugar and 1 tbsp cinnamon in small bowl. 2. Mix well and set aside 3. For cookie dough, combine shortening and brown sugar in large bowl. 4. Mix well. 5. Beat in eggs and vanilla until blended 6. Combine flour, baking powder, salt and 1 tsp cinnamon in small bowl.. 7. Add to creamed mixture and mix well 8. Turn dough onto sheet of waxed paper. 9. Spread into 9 x 6 inch rectangle usning rubber spatula. 10. Sprinkle with 5 tbsp cinnamon mixture to within 1 inch of edge. 11. Slowly roll up jellyroll style into log. 12. If dough cracks smooth with fingers while rolling. 13. Dust log with remaining cinnamon mixture. 14. Wrap tightly in plastic wrap;refrigerate 4 hours or overnight. 15. Heat oven to 375*. 16. Grease cookie sheets. 17. Slice dough 1/4 inch thick. 18. Place on prepared cookie sheets. 19. Bake for 8 min. 20. Cool on sheets for 4 min,;transfer to cooling racks. |
