Recipe created by Chef Dez/Gordon Desormeaux. He suggests serving with pino gris applesauce, but I prefer a salsa of diced apples and jalapeno peppers in lime juice (see /Green-Apple-Salsa-the-Worlds-Greatest-by-Far-191845 ).
Ingredients:
4 cups cold water
1/4 cup salt
1 lb pork tenderloin
1 tablespoon cinnamon
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cumin
1 tablespoon olive oil
1 teaspoon honey
Directions:
1. Dissolve the salt in the water. Add the tenderloin, and brine for one hour in the refrigerator.
2. Remove the tenderloin and pat dry.
3. Mix the next seven ingredients in a small bowl to make a wet rub.
4. Apply this rub to all areas of the tenderloin, place in a plastic bag, and let sit in the refrigerator for 1/2 hour to 12 hours.
5. Preheat the oven to 400 degrees.
6. Roast the tenderloin in the oven for 20-25 minutes.
7. Let stand for 5-10 mintues before slicing.
