This week's muffin is not the most experimental but they are simple and delicious! And who doesn't love a good cinnamon raisin combo? Ingredients:
2 c. whole wheat flour |
3/4 tsp. baking soda |
1/2 tsp. salt |
1/4 c. light brown sugar |
1/4 c. honey |
2 eggs |
1/3 c. olive oil |
1 c. applesauce |
1 tsp. vanilla |
4 tsp. cinnamon |
1/2 tsp. nutmeg |
1/3 c. raisins |
Directions:
1. Pour all ingredients into large bowl, except raisins. 2. Stir until well blended. 3. Stir in raisins. 4. Spoon into paper lined muffin trays 5. Bake at 350 F for 15 min. 6. **Makes 1 dozen. |
