This recipe I must have cut off the powdered sugar cardboard box, circa 1980 or 1970. Never tried this, and did tonight, with a bit of tweaking. It is very good, good texture, etc. an Old-fashioned simple recipe and it even behaves when I cut the fat in half, and threw in whole wheat! Read more ! Ingredients:
3/4 cup granulated sugar |
1/4 cup soft shortening ( i did 2 tablespoons applesauce + 2 tablespoons butter) |
1 egg |
1 1/4 cups milk (me: soy milk) |
2 1/2 cups a-p flour (me: 1 cup whole wheat pastry, and 1 1/2 all purpose flour) |
3 teaspoons baking powder |
1 teaspoon each salt and cinnamon (i cut back on the salt, and doubled the cinnamon) |
1/2 cup raisins (me: currants) |
preheat oven 350 degrees |
Directions:
1. Prep loaf pan- I used non-stick spray, applied lightly and next I floured pan. 2. Mix together sugar , shortening, applesauce and egg until well blended. Stir in milk. 3. Combine dry ingredients and stir together with a fork. Stir into the creamed mixture, don't over-work-lumps are ok. Fold in dry fruit. Pour into a greased and floured 9X5X3 inch loaf pan. Bake in 350 degree oven 60 minutes. (me-55 minutes toothpick came out clean). |
