Submitted by Hanna Barringer of Loudon, Tennesse. These scone-like snacks are equally good out of the oven or at room temperature. Ingredients:
2 cups all-purpose flour |
3 teaspoons baking powder |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground nutmeg |
1 cup nonfat milk |
1/4 cup canola oil |
1/4 cup honey |
1/3 cup raisins |
Directions:
1. In a large bowl, combine the four, baking powder, salt, cinnamon, and nutmeg. In a small bowl, combine the milk, oil, and honey; add to the dry ingredients and stir just until moistened. Stir in raisins. 2. Drop by tablespoonfuls onto baking sheets coated with cooking spray. Bake at 425 degrees for 8-10 minutes or until lightly browned. Remove to wire racks. |
