Cinnamon Raisin Apple Indian Pudding

Ingredients:
4 cups nonfat milk (or 1/2 or 2%)
2/3 cup yellow cornmeal
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon salt
2 eggs, lightly beaten
1/2 cup packed raisins
4 apples, cored and chopped
vegetable oil cooking spray
Directions:
1. Preheat oven to 350 degrees F.
2. Spray 9 square baking dish.
3. In heavy saucepan, heat the milk to boiling.
4. Whisk in cornmeal and cook and stir until thick (about 3 minutes).
5. Remove from heat.
6. Stir in brown sugar, cinnamon, and salt.
7. Stir in eggs, raisins, and apples.
8. Pour into pan and bake for 60 minutes.
9. Serve.
