Tasty pear and yogurt muffins. Ingredients:
2/3 cup flour |
2/3 cup wheat flour |
2 tsp baking powder |
1/2 tsp baking soda |
2/3 cup light brown sugar, packed |
1 tsp cinnamon |
2 tbsp canola oil |
2 tsp vanilla yogurt |
8 ounce plain fat-free yogurt |
1 egg |
1 1/2 pear, grated |
2 1/2 tbsp sugar |
Directions:
1. Preheat oven to 400 degrees. 2. Combine all ingredient except the sugar. Fill muffin tins 1/2 full. Combine the sugar with 1/2 tsp cinnamon. Sprinkle on the tops of the muffins. Bake for 20 minutes or until muffins spring back when touched lightly in the center. Remove from pans immediately. Cool on racks. |
