I got this from Sacred Heart Hospital's newsletter. It's quick, easy, less than 50 cents per serving and makes a great breakfast on the go. You can pack for school lunches or warm up for a quick breakfast. Good servied wih fruit and yogurt. Ingredients:
3 cups rolled oatmeal |
1 cup raisins |
2 teaspoons baking powder |
2 teaspoons cinnamon |
1/2 cup nonfat yogurt |
1/2 cup nonfat milk |
2 tablespoons honey |
1/2 cup applesauce |
2 large eggs |
1/4 cup canola oil |
2 tablespoons vanilla extract |
2 tablespoons brown sugar |
Directions:
1. Preheat oven to 350°F. 2. Combine first three ingredients and 1 1/2 teaspoons cinnamon in large bowl. 3. In another bowl, mix together next seven ingredients until well combined. 4. Add to dry ingredients and stir thoroughly. 5. Pour mixture into a lightly oiled 8 inch square baking dish. Sprinkle with brown sugar and remaining 1/2 teaspoons cinnamon. 6. Bake 30-35 minutes. A toothpick inserted in the middle should come out clean. 7. Allow to cool for 15-20 minutes. 8. Cut into 12 squares. |
