Since the LSU Tigers played their game on Saturday morning at 11AM, we were able to make it to the Vigil Mass for a change. When I got up at 8:30 - I made these cinnamon muffins (from a recipe that I got from the Taste of site to keep everybody happy until real breakfast ws ready. It worked like a dream. Anthony and I even had a chance for a second cup of coffee before I hit the kitchen to make breakfast. Hope someone else will enjoy these too. They DO go great with coffee. (S m i l i n ') 1/2-cup Crisco shortening 1/2-cup granulated sugar 1 egg 1 12/-cups all-purpose flour 1 1/2-tspn baking powder 1/2-tspn salt 1/4-tspn nutmeg 1/2-cup milk TOPPING 1/2-cup sugar 1 1/2-tspn cinnamon 3-tbspn margarine or butter, melted In a bowl, cram shortening and sugar. Add egg; beat well. Combine flour, baking powder, salt and nutmeg; add to creamed mixture alternately with milk and mix well. Fill greased muffin cups half full. Bake at 350 degrees for 20 minutes . (Toothpick test them for doneness.) In a shallow bowl, combine sugar and cinnamon,. Dip muffin tops in butter, then in cinnamon-sugar. Serve warm. -Suz Ingredients:
