A delicious, cinnamon muffin...perfect for breakfast or brunch, and delicious with milk or coffee. Ingredients:
1/3 cup shortening |
1/2 cup sugar |
1 egg |
1 tablespoon vanilla |
1 1/2 cups all-purpose flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1/4 teaspoon ground nutmeg |
1 tablespoon ground cinnamon |
1/2 cup milk |
6 tablespoons butter (melted) |
1/2 cup sugar |
2 tablespoons cinnamon |
Directions:
1. Preheat oven to 350°F. 2. In a small bowl, beat together shortening, sugar, egg, and vanilla. 3. In a separate bowl, combine flour, baking powder, salt, nutmeg, and cinnamon. 4. Add flour mixture alternately with the milk to the shortening mixture. 5. Fill greased muffin cups 1/2 to 2/3 full with batter, and bake at 350°F for 20 minutes. 6. Once muffins are cooked, allow to cool for 5 minutes. 7. For topping, roll the tops of the muffins in the melted butter, and then in the cinnamon-sugar mixture. Serve warm with milk or coffee! |
