Scones that will beat Starbucks' scones any day. Ingredients:
3 cups all-purpose flour |
1 1/2 tablespoons baking powder |
3/4 teaspoon salt |
1/4 cup white sugar |
1 tablespoon ground cinnamon |
1/4 cup maple syrup |
1/3 cup soymilk |
1/2 cup butter (i used smart balance) |
2 eggs, beaten |
1/2 cup chopped walnuts (optional) or 1/2 cup slivered almonds (optional) |
Directions:
1. Preheat the oven to 375°F 2. Grease and flour a cookie sheet. 3. Combine the flour, baking powder, cinnamon, sugar, and salt in a mixing bowl and blend with a whisk. 4. Cut in butter with a pastry blender or two knives. 5. In a separate bowl beat the eggs; Mix in milk and maple syrup. 6. Make a well in the center of the dry ingredients and add the wet ingredients all at once. Stir in nuts. 7. Gather the dough into a ball and roll out between two pieces of waxed paper forming a circle 1/2 to 1-inches thick. 8. Cut into 8 pie shaped pieces and place on the prepared cookie sheet. 9. Sprinkle sugar and cinnamon onto the 8 scones. 10. Bake for 20 minutes. |
