I got this recipe from our local paper and didn't want to lose it! These are good with syrup or with the icing recipe provided. Ingredients:
1 1/2 cups all-purpose flour |
3 tablespoons sugar |
1/2 teaspoon salt |
4 teaspoons baking powder |
1 tablespoon ground cinnamon |
2 eggs, beaten |
1 cup milk |
2 tablespoons light corn syrup |
1/4 cup butter, melted |
1 tablespoon vanilla |
2 cups confectioners' sugar |
2 teaspoons vanilla |
1 tablespoon milk |
Directions:
1. In a medium bowl, combine flour, sugar, salt, baking powder, and cinnamon, set aside. 2. In a large bowl, beat together eggs, milk, corn syrup, butter, and vanilla. Stir in the flour mixture. 3. Heat a lightly oiled griddle or frying pan over medium heat. Pour approx 1/4 cup batter onto the griddle for each pancake. Brown on both sides, serve hot. 4. For Icing: combine confectioner's sugar, vanilla extract, and enough milk to make a liquid frosting. Drizzle over hot pancakes before serving. |
