3 lbs chicken, cut up |
1 tablespoon cinnamon |
2 tablespoons sugar |
1 teaspoon fresh ground pepper |
3/4 teaspoon dried oregano |
1 1/2 teaspoons salt |
1 1/2 cups flour |
vegetable oil |
Directions:
1. Place chicken pieces in a baking dish. Mix cinnamon, sugar, pepper, oregano and salt in a small bowl. 2. Sprinkle over chicken, coating both sides. Cover chicken and refrigerate at least 1 hour. 3. Dredge chicken in flour, shake off excess. 4. In a large saucepan, heat 2 inches of oil to 375. Fry chicken in batches, without crowding, turning, until browned on the outside and tender and cooked through. About 25 minutes. |
