1/3 cup butter, softened |
1/2 cup sugar |
1 egg |
1/2 cup milk |
1-1/2 cups king arthur unbleached all-purpose flour |
1-1/2 teaspoons baking powder |
1/2 teaspoon salt |
1/4 teaspoon ground nutmeg |
topping: |
1/4 cup butter, cubed |
1/2 cup sugar |
1 teaspoon ground cinnamon |
Directions:
1. In a bowl, cream butter and sugar; beat in egg and milk. Combine flour, baking powder, salt and nutmeg; stir into creamed mixture (batter will be stiff). Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 15-20 minutes or until muffins test done. Meanwhile, melt butter and combine sugar and cinnamon. Remove muffins from oven; immediately dip tops in butter, then in cinnamon-sugar. Yield: about 1 dozen. |
