One of the most famous coffee cake…Cinnamon, coffee and Pecans are really great combination. Store it in an airtight container up to one week. Ingredients:

1 tbsp baking powder |
2 cups plain flour |
1 tsp salt |
3/4 cup butter, softened |
1 cup caster sugar |
2 eggs |
2 tsp instant espresso coffee, dissolved in 3 tbsp warm water |
1 cup fresh milk |
1 1/2 cups pecans, chopped |
topping |
1/2 cup plain flour |
3 tbsp butter |
1 tsp cinnamon |
1/2 cup pecans, coarsely ground |
powder sugar for dusting |
Directions:
1. Cake: 2. Preheat oven to 340F and grease a 22cm cake pan. 3. Sift together the baking powder, flour and salt. Set aside. 4. Cream butter and sugar until light and fluffy. Add eggs and instant coffee. Alternately beat in the sifted ingredients and milk. Add Pecans, stir and pour in the pan. 5. Topping: 6. Combine flour and cinnamon, rub in butter and add Pecans. Mix well and sprinkle over the top. Bake for about 60 minutes. Cool before cutting. Dust with powder sugar. |
