An easy coffee cake from Eet Smakelijk, the Junior League cookbook from Holland, Michigan. Ingredients:
1 cup flour, sifted |
2 teaspoons baking powder |
1 egg |
2 tablespoons vegetable oil |
1 teaspoon vanilla |
1/2 cup sugar |
1 pinch salt |
2/3 cup milk |
1/3 cup brown sugar |
1 teaspoon cinnamon |
1/2 cup pecans, chopped |
1/2 cup butter, melted |
Directions:
1. Preheat oven to 375°F Grease and flour an 8x8 baking pan. 2. Combine all cake ingredients, and beat until smooth. Pour into pan. 3. Combine topping ingredients (except butter), and sprinkle over batter. 4. Bake 20-25 minutes, then pour melted butter on top. Return to oven and bake for another 5 minutes. |
