These are my absolute favorite cookies. They're really good cinnamon cookies with just a hint of almond flavor, which makes all the more tasty. I got them from Teens Cook Dessert and since I made them, my family's been asking for them all the time. Ingredients:
1 cup butter |
1 cup ground almonds |
1/3 cup sugar |
1 2/3 cups flour |
1/4 cup superfine sugar |
2 teaspoons ground cinnamon |
Directions:
1. Place the butter, almonds, and sugar into a large bowl 2. Beat with an electric mixer on medium speed or until light and fluffy. 3. Add the flour. 4. Mix for 2 minutes, or until completely incorporated. 5. Cover the dough with plastic wrap and refrigerate for at least 2 hours. 6. Preheat the oven to 350 degrees Fahrenheit. 7. Place the superfine sugar and cinnamon into a shallow bowl. 8. Mix well. 9. Scoop or roll the cookies into 3/4-inch balls 10. Place them about 1 inch apart n an ungreased baking sheet 11. Bake for 20 minutes, or until they just start to brown on the edges. 12. Cool for about 5 minutes 13. Roll them in cinnamon sugar. 14. Cool on parchment or waxed paper. |
