Ahhh! Basmati Rice! A staple in Indian cuisine. I love this version with my Roasted Chicken with Curry Leaves and Spices topped with my Curried Béchamel. Ingredients:
2 cups water (or chicken stock) |
1 cup basmati rice |
1 whole cinnamon stick (or cassia) |
4 whole cloves |
1/2 teaspoon cumin |
1/4 teaspoon salt |
Directions:
1. Bring water to a boil in saucepan. Slowly add rice then cinnamon, cloves and cumin. 2. Cover and reduce to simmer. Cook until rice is tender and water is absorbed, about 10- 15 minutes. 3. Remove from heat. Fluff with a fork and serve. |
