Cinnamon and Raisin Biscuits |

this will make about a dozen..just right for a lazy Sunday morning Ingredients:
2 cups flour |
1 tablespoon sugar |
1/2 teaspoon baking soda |
1/2 teaspoon cinnamon |
6 tablespoons butter |
1/4 cup plumped golden raisin |
1/4 cup buttermilk |
cinnamon |
2 tablespoons butter, softened |
2 tablespoons milk |
1/4 teaspoon vanilla extract |
1 1/4 cups confectioners' sugar |
Directions:
1. combine flour, sugar, soda and 1/2 tsp cinnamon in bowl - 2. cut in 6 tbls butter until crumbly - 3. mix in raisins - add buttermilk.mixing to form soft dough. 4. knead lightly on floured surface. 5. pat into rectangle. 6. sprinkle generously with additional cinnamon. 7. knead lightly. 8. pat to 1/2 -3/4 thickness. 9. cut into biscuits. 10. placeo on baking sheets. 11. bake at 425* for 12-15 minutes or until light brown - 12. spread hot biscuits with vanilla glaze - 13. to prepare VANILLA GLAZE:. 14. blend softened butter, milk, vanilla and confectioners sugar in a bowl - 15. spread over hot biscuits. 16. serve warm. |
