A yummy rich tasting pasta dish that is made by cooking the pasta in chicken broth. I had thought of making it a soup, but most of the water was absorbed and it ended up more like a stove top casserole. With more water or broth it could be a soup. Could use shrimp instead of the 'crab'. Ingredients:
2 c fat free chicken broth |
2 oz sliced mushrooms |
2 oz fresh spinach |
1 green onion |
2 cloves roasted garlic |
2 oz crab delights |
2 oz macaroni |
2 t celery |
1 pepper to taste |
1 t olive oil |
Directions:
1. Saute the mushrooms, onion, celery, crab delights (or shrimp) and garlic in the olive oil. 2. In a separate pan bring the chicken broth to a boil, add the pasta (any shape, I used farfale) and cook for 12 minutes. (Don't drain, most of the water will be absorbed). 3. Add the sauted mixture to the pasta. Add in the uncooked spinach and mix it well until the spinach wilts (about a minutes). Season with pepper to taste. 4. Variations - could add some lemon grass to give it some brightness. Lemon or lime juice might be nice. Or could add ginger and/or curry. Or cilantro. Whatever you like and have on hand. |
