This simple relish will enliven your grilled meats, burgers, and sandwiches! Ingredients:
1 1/2 lbs plum tomatoes, cored and roughly chopped |
1/2 red bell pepper, seeded, stemmed, and minced |
2 teaspoons ground cumin |
1 tablespoon minced onion |
salt, to taste |
cayenne pepper, to taste |
1 lime, juice of |
2 tablespoons cilantro, chopped |
Directions:
1. Combine tomatoes, bell pepper, cumin, onion, salt, cayenne pepper, and lime juice. Taste and adjust seasonings if needed. 2. Just before serving, add cilantro. |
