I love fresh corn off the cob. This is a way to use it in a tasty low fat/no cholesterol way! Ingredients:
3 cups fresh corn, cut from cob |
1/4 cup water |
1/4 cup fresh cilantro, chopped |
1/4 teaspoon salt |
1/4 teaspoon cumin seed |
1/8 teaspoon pepper |
1 medium tomato, peeled,seeded,and chopped |
Directions:
1. Combine first six ingredients in a 2 qt baking dish; stir well. 2. Cover with wax paper and microwave at high for 6-8 minutes. 3. Stir in tomato, cover and microwave or high for 1-2 minutes or until corn is tender. |
