Cilantro Rice With Peaches |

A great accompaniment to grilled meat or fish. Works equally as well without the peaches. Ingredients:
1 cup uncooked rice |
4 fresh peaches |
1/2 cup fresh cilantro |
1 bunch green onion |
4 tablespoons light olive oil |
2 tablespoons lemon juice |
salt |
Directions:
1. 1. Cook rice according to directions. 2. 2. Dice peaches; chop cilantro; slice green onions. 3. 3. Mix all ingredients in a large bowl. 4. 4. Salt to taste. |
