Cilantro Rice With Peaches

A great accompaniment to grilled meat or fish. Works equally as well without the peaches.
Ingredients:
1 cup uncooked rice
4 fresh peaches
1/2 cup fresh cilantro
1 bunch green onion
4 tablespoons light olive oil
2 tablespoons lemon juice
salt
Directions:
1. 1. Cook rice according to directions.
2. 2. Dice peaches; chop cilantro; slice green onions.
3. 3. Mix all ingredients in a large bowl.
4. 4. Salt to taste.
