Cilantro Rice With All Raw Veggies |

delish!! Ingredients:
1 cup uncooked rice |
2/3 cup cilantro, loosely packed |
1/3 cup chopped onion |
1/4 cup green onion, chopped |
1 jalapeno (or to taste) |
1 tablespoon lime juice |
1 teaspoon olive oil |
Directions:
1. Cook rice as usual, with 1 teaspoons salt per cup of rice. I always use long grain rice. However, you could use minute rice too. 2. Puree everything except the rice in a blender, add to the cooked rice, stir well. |
