Ingredients:
vegetable cooking spray |
1 teaspoon vegetable oil |
1 1/2 cups long-grain rice, uncooked |
1 cup chopped onion |
1/2 cup chopped green pepper |
2 3/4 cups canned low-sodium chicken broth, undiluted |
1/2 teaspoon salt |
1/2 teaspoon dried oregano |
1 bay leaf |
1/3 cup chopped fresh cilantro |
Directions:
1. Coat a large saucepan with cooking spray; add oil. Place pan over medium-high heat until hot. Add rice; saute until rice is golden. Add onion and pepper; saute 2 to 3 minutes or until vegetables are tender. Add chicken broth and next 3 ingredients. Bring to a boil. Cover, reduce heat, and simmer 20 minutes. Remove from heat; let stand 5 minutes or until liquid is absorbed. Remove and discard bay leaf. Stir in cilantro. |
