Easy Mexican-ish rice dish I made the other night, guests said I needed to put it up here, so here is is. Ingredients:
2 tbls olive oil |
1/4 cup cilantro sofrito (jarred, find it at a mexican grocery or in the hispanic section at a general grocery) |
1/4 cup chopped cilantro (about 1/2 bunch, i rip it off about where the leaves end) |
1 1/2 cups medium grain rice |
1 1/2 tsp salt |
water |
Directions:
1. Heat olive oil over medium heat on a large saucepan. 2. Add sofrito and cilantro and saute, stirring constantly, until flavors are released. 3. Add rice and mix well. Saute for about 2 minutes. Add salt. 4. Add water to a level that's almost up to your first knuckle, I think that's about 1/2 . Stir well. 5. Bring to a boil. Reduce heat to low. Cover and cook for 15 minutes. 6. Remove from heat and check rice texture - water should be absorbed and rice should be tender. Recover and let stand for 5 minutes before serving. |
