Excellent side to any tex-mex meal. Mouth-cleansing and spicy, but not toooooo spicy. Ingredients:
2/3 cup fresh cilantro, loosely packed |
1/3 cup chopped onion |
1/4 cup chopped scallion |
1 jalapeno (or to taste) |
1 tablespoon lime juice |
1 teaspoon olive oil |
2 -3 cups cooked rice |
Directions:
1. Mix all above ingredients except rice in food processor or blender. 2. Combine with cooked warm rice. 3. And kosher salt to taste. |
