Just another way to use the cilantro, garlic and chives from the yard. Nice for summer side dish.
Ingredients:
2 pounds baby red skin potatoes boiled tender and cooled
1 cup of mayo
3/4 cup chopped cilantro
1 tablespoon minced garlic
1 teaspoon sea salt
pepper to taste
1/3 cup finely minced onion
1 tablespoon chopped fresh chives
Directions:
1. Slightly mash potatoes
2. Add the rest of the ingredients to potaoes
3. Blend all together chill and serve
