Just another way to use the cilantro, garlic and chives from the yard. Nice for summer side dish. Ingredients:
2 pounds baby red skin potatoes boiled tender and cooled |
1 cup of mayo |
3/4 cup chopped cilantro |
1 tablespoon minced garlic |
1 teaspoon sea salt |
pepper to taste |
1/3 cup finely minced onion |
1 tablespoon chopped fresh chives |
Directions:
1. Slightly mash potatoes 2. Add the rest of the ingredients to potaoes 3. Blend all together chill and serve |
