Came up with this the other day. Feel free to tweak it and give me some criticism. Ingredients:
1/2 bunch cilantro |
1 scallion stalk, chopped |
1/3 c roasted, unsalted peanuts |
1/4 c parmesan, coarsely chopped |
2 thai bird chilis |
juice from 1/2 a lime |
1/2 tsp kosher salt |
1/2 tsp black pepper, ground |
1/2 c extra virgin olive oil |
Directions:
1. Combine cilantro, scallion, peanuts, chilis, and lime juice in a blender or food processor until coarse. 2. Add parmesan, salt and pepper and combine while slowly pouring in olive oil. |
