This pesto is a suggested variation on a traditional basil pesto taken from Diana Shaw's Essential Vegetarian. It makes for a nice change, and is very versatile. Ingredients:
4 cloves garlic |
2 tablespoons pine nuts, toasted |
2 cups packed fresh cilantro |
3 tablespoons extra virgin olive oil |
2 tablespoons grated asiago cheese |
Directions:
1. Place everything in a food processor, and pulse to combine, then process fully to make a smooth paste. |
