Easy and yummy Cilanto and lime dressing. Ingredients:
1 small poblano pepper |
20 sprigs cilantro |
1/2 c fresh lime juice |
1/4 tsp salt |
1/4 tsp black pepper |
1/4 c vegetable oil |
Directions:
1. Preheat grill on medium. Place pepper on hot grill grate. Cook 12-15 mins or until blackened all over,turning occasionally. Wrap pepper in foil;let cool. 2. Remove pepper from foil;peel off skin and discard. Remove and discard stem and seeds. Puree pepper in blender or food processor along with cilantro,lime juice,salt and pepper. With machine running,gradually add oil till blended. |
