A Southwestern twist on traditional coleslaw. Ingredients:
1 (16 ounce) bag coleslaw mix |
1/2 cup coarsely chopped cilantro |
1/4 cup olive oil |
3 tablespoons lime juice |
2 tablespoons ground cumin |
1 tablespoon cayenne pepper |
1 tablespoon garlic powder |
1 teaspoon salt |
freshly ground black pepper to taste |
1/4 cup sliced almonds, or to taste (optional) |
Directions:
1. Combine coleslaw mix and cilantro in a serving bowl. 2. Whisk olive oil, lime juice, cumin, cayenne pepper, garlic powder, salt, and black pepper together in a separate bowl until the oil emulsifies; pour over the coleslaw mixture. 3. Cover the bowl with plastic wrap and refrigerate 1 to 2 hours. Garnish with sliced almonds to serve. |
