Cilantro-Lemon Grilled Chicken |

Marinating the chicken overnight infuses it with the tangy flavor of the citrus-yogurt marinade. Ingredients:
1/3 cup plain fat-free yogurt |
1/4 cup chopped fresh cilantro |
3 garlic cloves, minced |
1 tablespoon olive oil |
1 teaspoon grated fresh lemon rind |
2 teaspoons fresh lemon juice |
4 (6-ounce) skinless, boneless chicken breast halves |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1/8 teaspoon ground cumin |
cooking spray |
Directions:
1. Combine first 6 ingredients in a large zip-top plastic bag; add chicken, and seal. Marinate in refrigerator at least 8 hours or overnight, turning bag occasionally. 2. Preheat grill. 3. Remove chicken from bag; discard marinade. Sprinkle chicken evenly with salt, pepper, and cumin. Place chicken on grill rack coated with cooking spray; grill 6 minutes on each side or until done. |
