Cilantro Garlic Shrimp and Asparagus |

Ingredients:
1 pound(s) asparagus, cut into 1 pieces |
1/3 cup(s) cilantro, chopped |
4 clove(s) garlic, minced |
4 tablespoon(s) lime juice |
1 tablespoon(s) olive oil |
8 ounce(s) raw shrimp, rinsed, peeled and patted dry |
1/8 teaspoon(s) red pepper flakes (optional) |
1/2 teaspoon(s) salt |
Directions:
1. Heat large skillet coated with nonstick cooking spray over medium-high heat. Cook shrimp 2 minutes, stirring frequently. Add asparagus; cook 4 minutes or until just crisp-tender, stirring frequently using 2 utensils. Add garlic; cook 15 seconds stirring constantly. 2. Remove from heat and add remaining ingredients. Toss gently to combine. serve immediately. 3/4 cup per serving. 3. serve as is or over 1/2 cup cooked brown rice, if your diet permits. |
