This is one of my family's favorite recipes! Ingredients:
4 (3 ounce) boneless chicken breasts |
1 teaspoon olive oil |
3 ounces light cream cheese |
3/4 cup milk |
2 tablespoons fresh lime juice |
1/2 cup fresh cilantro |
1 jalapeno pepper, chopped |
Directions:
1. Rinse chicken and pat dry. Season both sides with salt and pepper. 2. Heat a large skillet, spray with cooking spray. Add the oil: brown chicken on both sides. 3. Remove chicken from skillet; keep warm. 4. To the skillet, add cream cheese, stirring until cheese melts. Whisk in the milk; stir until well blended. 5. Add lime juice and cilantro. 6. Return chicken to skillet; cover and simmer for 15-20 minutes or until chicken is cooked through. Garnish with chopped cilantro before serving. |
