CILANTRO CARROTS WITH CUMIN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Malta Estate in Bedford, Texas in 1991. Ingredients:
2 pounds carrots cut into 2” long pieces then quartered |
6 tablespoons water |
3 tablespoons fresh lemon juice |
3 tablespoons olive oil |
2 tablespoons ground cumin |
2 garlic cloves pressed |
2 tablespoons minced fresh cilantro |
Directions:
1. Combine carrots and water in a large saucepan then season with salt. 2. Cover and boil until carrots are crisp tender about 7 minutes then drain off any excess water. 3. Transfer carrots to a large shallow bowl and mix in lemon juice, oil, cumin and garlic. 4. Season with salt and pepper then cool and add cilantro. |
